Everwild Distillery & Tasting Room

So much progress on so many fronts, where do I begin… Our contractors have been working hard through the frigid winter season to keep our buildout on track. All underground plumbing has been completed, including the new sprinkler system. The interior concrete floors are all poured. The new roof system has been installed over the distillery. Interior and exterior framing is just about finished. Electrical contractors have started their work. Its a huge project to coordinate all of this work and we are very grateful to Luke Keller (SIC) for doing an awesome job keeping it on schedule.

“When will you open?” is the number one question we get asked. We will open when everything is ready, and we are hopeful that will be in the May-June 2022 timeframe, barring any unexpected issues or surprises.

Everwild Spirits - Bottling Room

Our bottling facility has passed inspection and we have received our Warehousing & Rectifying permit from the Ohio Division of Liquor Control. We are now able to legally receive distilled spirits at our facility, and we can process (cut, blend, finish, etc…) and bottle those spirits for sale as well. We received our first shipment of new American white oak barrels from Speyside Bourbon Cooperage, based in Jackson, Ohio. These barrels were made only with Ohio-grown oak wood, and we plan to use these particular barrels for a double-oak barrel finish.

We also received our first shipment of whiskey bottle glass. You may be surprised to hear that there is a global-shortage of spirits bottle glass due to the covid pandemic, and we were really concerned we might not get our bottles delivered on time. We were very fortunate to get them on-time, as many distilleries around the country are struggling with delayed or cancelled shipments.

We are very grateful for all the positive comments and support we have received over the last year. We will have more exciting updates in the coming months leading to our official grand opening. I’ll finish this update with a few more photos of the construction process…
